Unrelated to wheat, not a grass, and therefore not a grain, these gluten-free groats feed like a grain with the added boon of high protein content. The flavor is nutty and reminiscent of herbal tea .
BASIC COOKING RECOMMENDATIONS:
Rinse buckwheat by covering measured groats with water to pour off debris, swirl to rinse, and then drain. Cook at a buckwheat to water ratio of 1:1.5. Measure cooking water, bring to a boil, add buckwheat, cover pot, and simmer, at lowest heat for 20 minutes.
