Non-bulbing onions to be used whole - white or red shaft with green tops. Finely chopped, these make delicious additions to soups and grain dishes.
MINTY SCALLION TOP PESTO RECIPE:
1/2 cup sunflower seeds, toasted
2-5 garlic cloves
GRIND THESE IN A FOOD PROCESSOR
3 cups scallion tops and mint (in whatever proportion you like or have at hand)
1/2 cup sunflower oil
1 tbsp lemon juice
1/2 tsp salt
1 tbsp sweet white miso (optional but highly recommended)
pinch of crushed red peppers
ADD THESE AND GRIND FURTHER
*You can substitute many types of herbs or greens in the above recipe (basil, cilantro, celery leaves... so many options depending on seasonality!)
